Wednesday’s What’s for Dinner

Spicy Tomato Salsa Shrimp Pasta
Full bodied flavor and a wonderful alternative to traditional pasta sauce.

Just Grillin carries bold ingredients for Spicy Tomato Salsa Shrimp Pasta:
20 medium shrimp peeled and de-veined
1 pound linguine
1 quart Stonewall Kitchen's Spicy Tomato Salsa
1/4 cup Extra Virgin Olive Oil
Kosher salt and freshly ground black pepper

Directions:
1. Bring 4 quarts of water to a boil, add 1 tablespoon salt and cook pasta until al dente (about 8 minutes)
2. In a hot saute pan, add the Extra Virgin Olive Oil. Season shrimp with salt and pepper and saute for 1 1/2 minutes on each side.
3. Add Spicy Tomato Salsa to shrimp, and warm gently.
4. Drain linguine, toss with shrimp and salsa. Serve immediately.

Monday’s Specialty Sauce

Spicy Corn Relish - Add a nice kick to your favorite Mexican cuisines, by using this spicy corn relish to top a plate of nachos, load fish tacos, or accompany award winning chili.

Spicy Corn Bread Pudding

Just Grillin carries bold ingredients for Spicy Corn Bread Pudding:
1 16 oz container sour cream
2 sticks butter, melted
1 jar Stonewall Kitchen Spicy Corn Relish
1 15 oz can sweet corn, creamed style
2 eggs, slightly beaten
1/2 teaspoon salt
1 box Stonewall Kitchen Traditional Cornbread Mix
Suggestion: Try Stonewall Kitchen
Wild Maine Blueberry Jam as a topping

Directions:
1. Preheat grill or oven to 350 F degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
2. Mix sour cream with melted butter in a large bowl.
3. Drain jar of Spicy Corn Relish through a fine sieve, just enough to remove any liquid, and add to bowl.
4. Stir in can of creamed corn. eggs and salt.
5. Add 1 box Traditional Cornbread Mix and mix until combined.
6. Bake for 40 – 50 minutes (some ovens may vary), cool slightly and top with red pepper jelly if desired.

Curried Cream Cheese Chutney Party Sandwiches

Just Grillin carries bold ingredients for
Curried Cream Cheese Chutney Party Sandwiches:
1 (8 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1/4 cup whipping cream
2 teaspoons curry powder
1 small clove garlic, pressed
1/2 cup Stonewall Kitchen Old Farmhouse Chutney
1 1/2 cups pecans, finely chopped, toasted, and divided
1 (16 ounce) very thinly sliced white bread loaf
1/2 cup butter, softened
Directions:1. Beat cream cheese, butter, and whipping cream at medium speed with an electric mixer until creamy.
2. Add curry powder, garlic, chutney, and one cup pecans, mixing until well blended.
3. Spread cheese mixture on half of bread slices; cover with remaining bread slices.
4. Trim crusts, and cut sandwiches in half diagonally.
5. Spread outside edges of bread with butter, and roll in remaining chopped pecans.
6. Serve immediately, or store, covered with damp paper towels, in an airtight container in refrigerator.

Apricot Mustard Glazed Chicken - Serves 6

Just Grillin carries bold ingredients for Apricot Mustard Glazed Chicken:
2 tablespoons olive oil
2 cups red, yellow, and orange bell peppers, cored and sliced into strips
1 cup onion, sliced
3 pounds bone in, skin on chicken parts
Stonewall Kitchen Apricot Mustard Glaze

Directions:
1. Preheat grill or oven to 350 degree F.
2. Heat 2 tablespoons olive oil in a large skillet. Saute bell peppers and onion until tender. Remove to a large greased baking dish.
3. Add additional oil, if needed and sauté chicken in batches over medium-high heat until golden brown on both sides.
4. Place chicken over vegetables and brush with Apricot Mustard Glaze. Bake until the chicken’s juices run clear and an internal temperature of 165 degree F is achieved. Brush chicken two more times with glaze during the cook time. Remove from oven, tent with foil and allow to stand 10 minutes before serving.

Friday’s What’s for Lunch

Chicken Mole – Serves 4

Just Grillin carries bold ingredients for
Chicken Mole:
2 tablespoons light olive oil or vegetable oil
1 ½ pounds boneless, skinless chicken breasts or thighs
Salt and pepper
1 cup onion, sliced
1 clove garlic, minced
Stonewall Kitchen Mole Sauce
1 tablespoon sesame seeds or pepitas (pumpkin seeds), toasted
2 tablespoons cilantro, chopped
Warm white corn tortillas

Directions:
1. Heat olive oil over medium-high heat in a large heavy skillet. Season chicken with salt and pepper. Add to skillet in batches and sauté until golden brown on all sides.
2. Remove and set aside covered with foil. Drain all but 2 Tbs. fat.
3. Add sliced onion and sauté until golden. Add garlic and stir for 1 minute.
4. Return chicken to skillet, add ½ bottle Mole Sauce. Reduce heat, cover and simmer 30 minutes, or until chicken is cooked through, spooning sauce over chicken every 10 minutes. Garnish with toasted sesame seeds or pepitas and chopped cilantro. Serve with warm corn tortillas and rice.
