Wednesday’s What’s for Dinner - Jan 29, 2013

Citrus Teriyaki Pasta

Just Grillin carries bold ingredients for
Citrus Teriyaki Pasta:
4 Tbsp. sesame seeds
1/4 cup olive oil
1/2 cup each of broccolini, shitake mushrooms, and yellow bell pepper, coarsely chopped
1 cup snap peas
1/2 cup edamame beans
1/4 cup green onion, chopped
1 lb. pasta

For the Sauce:
1/4 cup olive oil
1/2 cup Stonewall Kitchen Citrus Teriyaki Sauce
2 Tsp. sesame oil
1 Tsp. fresh ginger, grated
2 cloves garlic, minced
Salt and pepper

Directions:
1. Heat a large skillet over medium-high heat. Add sesame seeds and toast until golden brown. Stir frequently and watch closely to prevent over cooking. Remove from skillet and reserve.
2. In the same skillet sauté the broccolini, shitake mushrooms, yellow bell peppers, snap peas, edamame, and green onion in 1/4 cup olive oil until tender/crisp.
3. In a large bowl combine the sauce ingredients.
4. Cook the pasta according to package directions. Drain.
5. Toss the cooked pasta with the sauce, vegetables and toasted sesame seeds. Add salt and pepper to taste. Serve hot or at room temperature.

Cinnamon Apple Cheesecakes in Puff Pastry


Just Grillin carries bold ingredients for
Cinnamon Apple Cheesecakes in Puff Pastry:
1 sheet ready-to-bake puff pastry (such as Pepperidge Farm)
8 ounces mascarpone cheese
1 Tbsp. Flour
1 egg
1/4 tsp. cinnamon
2 Tbsp. Granulated sugar
1/2 tsp. vanilla
1/2 cup Stonewall Kitchen Cinnamon Apple Jelly
1/4 cup walnuts, chopped and toasted

Directions:
1. Preheat oven to 400 degrees F. Grease every other cup in a mini muffin tin.
2. Roll one sheet of puff pastry on a floured surface to measure 9 x 18 inches. Cut into 18 3-inch squares.
3. Press each pastry piece into each greased muffin cup allowing edges to drape over the edge of the cup.
4. In a mixer fitted with a paddle attachment mix the mascarpone cheese, flour, egg, cinnamon, sugar, and vanilla on medium speed until uniform. Fill each pastry ¾ full with cheese filling. Bake approximately 12 minutes or until the pastry is golden and the cheese filling is set.
5. Top each pastry with about 1 tsp. Cinnamon Apple Jelly and sprinkle with toasted chopped walnuts.
6. Serve warm.

Garnish with cilantro leaf

Directions:
1. Smear goat cheese on Stonewall Kitchen Down East Crackers.
2. Put a strip of Red Pepper Jelly down the center of the cracker. Garnish with a cilantro leaf.

Friday’s What’s for Lunch - Jan 25, 2013

Pigs in a Blanket – Makes 3 dozen appetizers

Just Grillin carries bold ingredients for
Pigs in a Blanket:
8 oz. prepared pizza dough or frozen dinner roll dough, thawed
1 egg
1 tsp. water
3 Tbsp. sesame seeds, toasted
Stonewall Kitchen
Cheddar Ale Mustard or Maine Maple Champagne Mustard

Directions:
1. Preheat oven to 400 degree F. Grease or line a baking sheet with parchment paper.
2. Cut dough into ½-inch round pieces. Roll each piece into an oval shape 1/8-inch thick.
3. Make egg wash by whisking together the egg and water. Brush one side of dough with egg wash.
4. Wrap each small frank with dough, egg wash side on the outside, overlap dough 1/2-inch and cover 3/4 of the frank.
5. Sprinkle sesame seeds over dough. Place on baking sheet 2-inches apart. Bake 10-15 minutes, or until golden brown.
6. Serve warm with Ballpark Mustard.

Wednesday’s What’s for Dinner - Jan 23, 2013

Meatloaf

Just Grillin carries bold ingredients for Meatloaf:
3/4 pound ground beef
3/4 pound ground pork
1/2 cup onion, chopped
1/3 cup Stonewall Kitchen Farmhouse Red Relish
1/4 cup tomato sauce
3/4 cup breadcrumbs
1 egg, slightly beaten
1 1/2 tsp. salt
2 Tbsp. Stonewall Kitchen Country Ketchup
2 Tbsp. light brown sugar

Directions:
1. Preheat oven to 350 degrees F. Grease a 9 x 5 inch loaf pan.
2. Combine the beef, pork, onion, Stonewall Kitchen Farmhouse Red Relish, tomato sauce, breadcrumbs, egg and salt. Mix thoroughly and place in prepared loaf pan.
3. Combine the Ketchup and brown sugar. Spread this mixture over the meat loaf.
4. Bake 1-1 1/4 hours until the meat loaf is firm and has an internal temperature of 160 degrees F. Remove meat loaf from the oven and drain off fat and let “set” 15 minutes before slicing and serving.

Monday’s Specialty Sauce - Jan 21, 2013


Spicy Corn Relish - Add a nice kick to your favorite Mexican cuisines, by using this spicy corn relish to top a plate of nachos, load fish tacos, or accompany award winning chili.

Spicy Shepherds Pie

Just Grillin carries bold ingredients for Spicy Shepherds Pie:
4 pounds Yukon Gold potatoes
1 1/2 cups light cream
1/2 stick butter
1 jar Stonewall Kitchen Spicy Corn Relish
1 Tablespoon Olive Oil
1 medium onion, chopped
1 Tbsp. whole cumin seed
1/2 cup fresh cilantro, chopped finely (1 tablespoon reserved)
3 pounds ground turkey
2 Tablespoons flour
1 – 1 ½ cups chicken or vegetable stock
salt and pepper to taste.

Directions:
1. Preheat grill or oven to 350 F.
2. Cut potatoes into 1 inch chunks. Place in a large pot filled with salted water and boil until tender, (approximately 15 minutes). Turn heat to low.
3. Drain off water and add 1/2 stick of butter and 1 1/2 cups of light cream.
4. Let simmer for about 10-15 minutes. Mash with a potato masher until thick and smooth. Set aside.
5. In a large frying pan, heat 1 tablespoon olive oil.
6. Saute chopped onion, whole cumin seed and all but 1 tablespoon of the chopped cilantro for about 2-3 minutes until onion starts to turn translucent.
7. Add ground turkey and continue to cook until turkey has browned. Drain off liquid. Add flour and sauté 2-3 min. Add 1 cup chicken or vegetable stock and simmer until sauce thickens. (Add more stock if needed) Add salt and pepper to taste.
8. Start to layer ingredients in a large rectangle glass or ceramic ovenproof casserole dish.
9. Add the ground turkey, spreading evenly to cover bottom of pan. Add the Stonewall Kitchen Spicy Corn Relish and cover the ground turkey with an even layer. Press down to pack tightly.
10. Finally top it off with the mashed potatoes.
11. Sprinkle the top with salt, pepper and the reserved 1 tablespoon chopped fresh cilantro.
12. Bake in a preheated 350 F grill or oven for 35-40 minutes.

Sunday’s Appetizers - Jan 20, 2013

Saga Blue Cheese Stuffed Prosciutto Wrapped Dates With Sweet Balsamic Reduction

Just Grillin carries bold ingredients for Saga Blue Cheese Stuffed Prosciutto Wrapped Dates With Sweet Balsamic Reduction:
1 package medjool dates
4 oz. Saga blue cheese
1/4 lb thinly sliced prosciutto cut into thirds vertically
1 cup Stonewall Kitchen Aged Balsamic Vinegar
1/4 cup sugar
Stonewall Kitchen Maine Maple Champagne Mustard, for dipping
Toothpicks for serving

Directions:
1. Heat oven to 400 degrees.
2. On stovetop heat balsamic vinegar and sugar and reduce to about half. Remove from heat and let cool.
3. Cut dates in half or quarters, depending on size. Stuff date with a little bit of blue cheese and then wrap with prosciutto. Use a toothpick to keep prosciutto in place.
4. Place wrapped dates on sheet pan and heat in oven about ten minutes or until prosciutto turns a bit crispy.
5. Remove from oven and drizzle sweet balsamic reduction over stuffed dates.

Friday’s What’s for Lunch - Jan 18, 2013

Curried Mango Chicken Salad

Just Grillin carries bold ingredients for
Curried Mango Chicken Salad:
1 1/2 lbs boneless skinless chicken breasts
3 scallions, including greens, diced
1/2 red bell pepper, seeded and diced
1/2 cup celery, minced
1/2 cup Stonewall Kitchen Curried Mango Grille Sauce
1 tablespoon mayonnaise
Salt & Pepper to taste
Optional: raisins and toasted chopped pecans

Directions:
1. Boil chicken until cooked. Or bake the chicken in a 350 degree oven covered with foil until an internal temperature of 165 degrees F is achieved and the juices run clear. Cool and cut or tear into 1/4 inch cubes.
2. Combine all of the above ingredients. Add salt and pepper to taste.

Serving suggestions:
Serve with toasted pita wedges or on top of cucumber rounds.
Hollow tomatoes and fill with chicken salad.
