Beef Bean Burritos

1 –
1 1/2 lbs. ground beef
1 cup diced yellow onion
1 Tbsp. minced garlic
1 jar Stonewall Kitchen Black Bean Salsa
1/2 cup fresh, chopped cilantro
1 package flour tortillas, medium size
Directions:
1. In
a large skillet, brown the beef. Drain and set aside.
2. In the same skillet, sauté onion and garlic until lightly browned.
3. Return the beef to the skillet and mix. Top mixture with Stonewall Kitchen
Black Bean Salsa and allow to simmer about 20 minutes until moisture evaporates
and mixture thickens.
4. Add fresh cilantro.
5. Fill warmed tortillas with beef and bean mix and top with cheese, guacamole
or sour cream as you wish.

Lamb Stew - Serves 4

tablespoons olive oil
3 pounds lamb, trimmed and cubed
Salt and pepper
1 1/2 cups onion, 1/4-inch dice
3-4 cups unsalted beef stock
1/4 cup Stonewall Kitchen Roasted Onion
and Garlic Jam
1/2 cup Guinness (optional)
1 1/2 pounds potatoes, peeled and cut into 1 ½- inch pieces
12 ounces carrots (about 4), peeled and cut into 1 1/2-inch pieces
Flour (optional)
1/4 cup flat leaf parsley, chopped
Directions:
1. Heat
oil in a 4-quart Dutch oven over medium-high heat until the oil is hot and
shimmers, but does not smoke.
2. Add meat in batches making sure to not overcrowd the pan. Season with salt
and pepper. Saute until browned on all sides. Remove meat and tent with foil
until all meat is cooked. Drain all but 2 tablespoons of fat from the pan.
3. Add onion and sauté until tender and translucent. Make sure onion does not
brown.
4. Add the beef stock, Stonewall Kitchen Roasted Garlic and Onion Jam and
Guinness. Adjust seasoning by adding salt and pepper.
5. Add cooked meat, potatoes and carrots. Bring to a simmer. Reduce heat, cover
and braise 1-2 hours until meat is tender. It is important that a low simmer is
maintained to assure the meat will be tender.
6. Stew can be thickened with flour if desired.

Bourbon Molasses Barbecue Sauce – This thick and succulent BBQ sauce is filled with smooth
bourbon flavors, finished with thick molasses, and is a "stick to your
ribs" kind of sauce.
Bourbon Molasses Barbecue Ribs -
Serves 6

Ribs:
Approximately 6 lbs. of
baby back ribs
One bottle of Stonewall Kitchen Bourbon Molasses Sauce
Chicken Stock
Directions:
1. Place two sides
(approximately 6 lbs.) of baby back ribs in a large stockpot.
2. Cover with 50/50 mixture of water and chicken stock. Bring to a boil, reduce
heat to a low boil and cook covered 1 hour and 15 minutes. Remove ribs and
brush with Stonewall Kitchen Bourbon Molasses Barbecue Sauce.
3. Grill ribs or wrap in foil and bake at 200-250 degree F for approximately 30
minutes, until meat is tender. If baking place ribs under the broiler a few
minutes for a crispy glaze. Baste with additional sauce while cooking.

Deviled Eggs
Just Grillin carries bold ingredients for Deviled Eggs:

dozen eggs, room temperature
1/2 cup mayonnaise
1 tsp. favorite Stonewall Kitchen Mustard
2 Tbsp. Stonewall Kitchen Farmhouse
Green Relish
1 tsp. onion, minced
1 tsp. salt
1/8 tsp. pepper
Paprika for garnish, optional
Directions:
1. Bring
to boil in a saucepan over high heat: 2-4 quarts water, enough to cover a
single layer of eggs by 1”. Add 1 Tbsp. salt to the water (this will make it
easier to peel the eggs). Gently lower eggs into the water. Return water to a
boil and immediately reduce the heat to a simmer. Cook eggs 12 minutes for
small eggs and 15 minutes for large eggs. Remove eggs with a slotted spoon and
place immediately into cold water. When cooled remove eggshells. Cut each egg
in half lengthwise and place the cooked egg yolk in a separate bowl. Rinse the
egg white and pat dry with a paper towel. Place egg white on a serving plate.
2. Smash the egg yolks and combine with the remaining ingredients. Mix until
smooth and uniform.
3. Fill each egg white with the yolk mixture. Sprinkle with paprika if desired.
Serve cold.

Three Thumbs Up Chicken
Just Grillin carries bold ingredients for Three Thumbs Up Chicken:
Whole cut-up chicken (or the equivalent of your favorite parts)
5 Tbsp melted butter
1/4 cup extra virgin olive oil
1/3 cup of Daddy's BBQ Sweet Love
Chicken Rub
Directions:
1. Preheat oven to 350 degree F.
2. Rinse and pat dry a whole cut-up chicken (or the equivalent of your
favorite
parts).
3. Combine melted butter with extra virgin olive oil and mix in Daddy's BBQ
Sweet Love Chicken Rub.
4. Paint the butter/oil / rub mixture onto the chicken pieces, coating
thoroughly (or place the chicken and butter/oil / rub mixture in a zippered
plastic bag and toss to coat).
5. Bake in a 350 degree oven for about 70 minutes or until cooked through (or
grill slowly over a low flame until done).
