Baking on the Grill?




Yes indeed you can bake on the grill! Even your Holiday favorites like cookies, breads, pies, and cakes. Below are some tips for when you bake on your grill!

Bread 

Yes you can make bread with your grill. Flat breads are a breeze and even raised breads work great. All you need to bake bread is an enclosed space that is heated. For this a grill works perfect. One thing to remember though is that grills can get much hotter than your oven and temperature control is not as precise. Delicate breads that can be a challenge in the oven should be avoided on the grill until you really get the hang of it.
Temperatures: My experience suggests that breads cook faster (sometimes twice as fast) on the grill as they would in the oven. Like I said grills can produce a lot more heat than you traditionally use to bake breads so try to keep a relatively low temperature. Use an oven thermometer placed near the bread to monitor temperatures. Also, because of the natural air flow inside your grill (whether charcoal or gas) you get more convection than you do in your oven. This is why it is important to keep a close eye on breads when you are grilling.
Cookies:
When you are cooking your cookies on the grill there are several things that you will want to avoid. It is a good idea not to put any sprinkles or icing on the cooking's while you are cooking them on the grill. Sometimes these things are put on before they are placed in the oven. You will also find that it is not a good idea to put any chocolate chip cookies on the outside grill. The problem with the chocolate chip cookies is that the chocolate portion of the cookies will usually end up burning. In some cases I have found that the chocolate has a very unusual taste to it.
With cooking on the grill you will find that timing really is everything. Cooking them just a second too long on the grill will cause you to end up with extra hard cookies. You can not use the same timing for the grill that you would use for the oven. The grill and the oven really are two different things. It also depends on how much charcoal you put on the grill. It may take a few trial and error attempts but you will eventually come up with a great way to make some tasty cookies.

Pies:
Fresh homemade apple pie straight from your grill or smoker is a throwback to the way apple pies were baked in a wood-fired kitchen stove years ago. In a smoker, the sweet smoke from pecan or a fruit wood really weaves through the layers of the pie to add a succulent, mouth-watering flavor profile. Not to mention you'll be able to show off your skills with dinner AND dessert!
This recipe would be best with a homemade crust, but don’t fret it if you’d rather use a store-bought crust. Besides, they don’t say easy as apple pie for nothing. This easy apple pie recipe is as easy and American as apple pie gets.

Apple Pie on the Grill Recipe-
Prep time: 15 minutes
Cooking time: 35 minutes


Ingredients
1 batch Mom's Homemade Pie Crust or frozen pie crusts (2 crusts)
1 cup sugar
1 tbsp flour
1 pinch salt
2 tsp lemon juice
1/4 tsp cinnamon
1/8 tsp nutmeg
2-3 tsp butter
1 tsp freshly grated Gruyere cheese (highly recommended)

8 fresh Granny Smith apples

1) Set up your grill for indirect grilling at 350-375°F. You can use a pyrex bowl since we’re doing indirect or stove-top dutch oven would also work.

2) Peel the apples – a potato peeler works well. Core and slice the apples into 1/4-3/8ths thick slices (too thick and they won't soften enough). In a large bowl toss the apples with the lemon juice (only use 3 tsp when doubling the recipe). Mix in the sugar, flour and salt. Stir well to coat the apples.
3) Place your pie crusts in the pan and gently pull to bring the edge up out of the pan. Fill with all the apples that will fit to make a heaping mound. Shake to cover the top of the apple filling with cinnamon and nutmeg. Just eyeball to evenly cover. Slice off small chunks of butter and place on top of the filling. It will melt and spread the spices through the pie. Lay the top crust on the pie and press the edges in.

4) Gingerly score the top in several places (don’t cut all the way through). Sprinkle a few pinches of sugar on top of the pie.
5) Place on the smoker/grill in the indirect zone. For wood choice I prefer pecan, but any fruit wood will work (1-2 ounces). Try only an ounce or two. Cook for 30-40 minutes until the crust browns. You should also start to see the filling bubble at the edges when it’s done.

6) Remove from the smoker and let cool. Sprinkle with some finely grated Gruyere cheese. This will melt into the crust to add a bit of savory to the sweetness of the pie. For a simple whipped topping mix 1 cup heavy cream, 1/4 cup sugar and 1 tsp vanilla.

Birthday Cake Leftovers


After a fun filled day of birthday festivities, what do you do with your left over birthday cake? I started researching all the possibilities and I did not realize all the different recipes one could use! Yesterday was Heather's Birthday and there is a solid 2/3 of the birthday cake left.  Here are 30 different ideas you could do with left over Birthday cake!

  1. Enjoy it the morning after, straight from the fridge or freezer. It's not elegant, but it has its charms.
  2. Birthday Cake Bread Pudding.
  3. Leave it at the bus stop in a tupperware container with a note for someone to find it. I'd eat that if I found it at a bus stop.
  4. Birthday Cake French Toast.
  5. If it's cupcakes...Bake 'em in MORE cupcakes!
  6. Chocolate Covered Cake on a Stick. Hey, they do it with cheesecake and Key Lime pie!
  7. Use one of these tricks to bring it back to life.
  8. Cake Crumb Cookies. I'd never heard of them til today!
  9. If one of them was a cheesecake, make a Grilled Cheesecake.
  10. Make trifle.
  11. More specifically, make a "Russian Cake" or "Creole Truffle". 
  12. Share it with the public (that's what I do at my store!).
  13. BIRTHDAY CAKE SHAKE!
  14. Crumble it up and use it as an ice cream topping or mix-in.
  15. Use it as a cinnamon roll filling! Like this recipe, but with cake instead of cookie dough.
  16. Slice it into thin slivers and use it to line a pie plate. Prepare a batch of your favorite no-bake pudding or cream pie filling, and pour it into the cake-sliver "crust". Possible flavor combinations: Hummingbird cake with banana pudding filling.
  17. Crumble it and make cake pops, adding a little extra frosting or butter if needed to make the filling hold together; coat with melted chocolate or candy coating as in this recipe.
  18. Similar, but with booze: make rum balls.
  19. Make Birthday Cake Soup.
  20. Make "chocolate salami". No, I am not kidding. And no, I didn't invent it, but I'm glad it exists.
  21. Use two thin slices as the bookends to an especially decadent ice cream sandwich.
  22. Make a cake-plate sampler and share it with your next-door neighbors. Extra points if you give it to a neighbor you've never met before.
  23. Make cake croutons, the perfect topping for candy salad!
  24. Use it (cake only, no frosting) to line a tart or pie pan before baking (it will keep things from sticking).
  25. Make a charlotte, using sliced birthday cake in place of bread or ladyfingers.
  26. Crumble up an entire slice and bake into a batch of brownies. You'll be rewarded with crunchy bits and swirls of buttercreamy frosting. 
  27. Top it with jam and eat instead of toast for breakfast. Healthy!
  28. Birthday cake cereal. Cut it into half-inch cubes and put in a bowl. Pour milk over it and eat with a spoon. Better than granola!
  29. Cube it and entomb it in an awful but awesome-looking jell-o mold.
  30. Deep-fry it. On a stick, if desired.

Monday’s Specialty Sauce - Mar 4, 2013

Wild Maine Blueberry Jam – Stonewall Kitchen’s jam is bursting with sweet, intensely flavorful wild Maine blueberries, the right amount of sugar and a splash of lemon, creating the perfect complement to Blueberry Sour Cream Coffee Cake.

Blueberry Sour Cream Coffee Cake

Just Grillin carries bold ingredients for
Blueberry Sour Cream Coffee Cake:
2 cups all purpose flour
1 Tbsp baking powder
1/4 Tsp salt
2 cups granulated sugar
2 sticks (1 cup) unsalted butter, softened
2 eggs, beaten lightly
1 cup sour cream
1 Tbsp vanilla extract
1 - 13 oz. jar Stonewall Kitchen Wild Maine Blueberry Jam, stirred well

Directions:
1. Pre-heat grill or oven to 350 degrees.
2. Butter a 10” bundt pan and lightly dust the inside with flour.
3. Sift together and set aside the flour, baking powder and salt.
4. In a mixer, or by hand, cream sugar and butter until light and fluffy.
5. Add eggs, blending well, and then add sour cream and vanilla. Mix until combined.
6. Gradually fold in flour, baking powder, and salt into creamed mixture until just blended.
7. Reserve 1/2 cup of batter and mix with 3/4 of the jar of blueberry jam.
8. Pour 3/4 remaining batter into the prepared pan, smoothing to the edges and creating a slight "trough" with a spatula.
9. Gently spoon the blueberry mix into the batter "trough", being careful not to touch the side of the pan.
10. Spread the remaining batter over the jam and smooth the top.
11. Set pan on middle rack in the oven and bake for about 60 minutes, or until the sides of the cake pull away from the pan and a cake tester (or toothpick) inserted in the center comes out clean.
12. Cool on a wire rack for at least 30 minutes. Turn onto a plate, sprinkle with confectioners sugar, drizzle with remaining jam and enjoy!
