Wednesday What's For Dinner- August 7th 2013

BBQ Pork Burgers


You know Just Grillin is all about burgers and we came across this tasty recipe that would be great for dinner- we are going to try these tonight.  My two favorite things are BBQ and burgers. Don't these look delicious?



INGREDIENTS

  • For the slaw
  • 1/4 cup mayonnaise
  • 1 tablespoon milk
  • 1 1/2 teaspoons white wine vinegar
  • 2 cups thinly sliced green cabbage
  • 1/2 cup very finely shredded carrot
  • 1 tablespoon thinly sliced fresh chives or scallions
  • Salt and freshly ground black pepper
  • For the pork burgers
  • 1/2 cup your fave bottled tomato-based barbecue sauce
  • 1/4 teaspoon cayenne
  • 1/2 to 3/4 teaspoon salt, or to taste
  • 1 tablespoon white wine vinegar
  • 1 1/2 pounds ground pork
  • 1/4 teaspoon freshly ground black pepper
  • Olive oil, for the grill rack
  • 4 buns or kaiser rolls, split and toasted or grilled

DIRECTIONS

  • Make the slaw
  • 1. Whisk together the mayonnaise, milk, and vinegar in a large bowl until smooth. Add the cabbage, carrot, chives, and salt and pepper to taste and toss to coat. Let the slaw stand at room temperature, uncovered, while you cook the burgers or, if you prefer your slaw crisp, cover it and refrigerate it for up to 8 hours.
  • Make the pork burgers
  • 2. Prepare grill for direct-heat cooking over medium-hot charcoal or medium heat for gas.
  • 3. Stir together the barbecue sauce, cayenne, 1/4 teaspoon salt, and vinegar in a small bowl until combined.
  • 4. Gently mix together the pork, the remaining 1/2 teaspoon salt, pepper, and 2 tablespoons of the barbecue sauce mixture until combined. Do not overmix. Form the mixture into 4 patties, each about 4 inches in diameter and 3/4 of an inch thick, being careful not to pack the pork too tightly.
  • 5. Oil the grill rack and then grill the burgers, flipping them every few minutes, until just cooked through, 6 to 10 minutes total. Then brush the top of each patty with 1 tablespoon or more of the barbecue sauce mixture, flip again, and grill for 30 seconds. Repeat, so that both sides have been slathered with the barbecue sauce mixture. Brush the cut sides of each of the buns with the remaining barbecue sauce mixture.
  • 6. Assemble the burgers, starting with the buns and the burgers and adding a heaping spoonful of coleslaw atop each one. Don’t forget to grab the napkins.

July 4th and the BBQ


The 4th of July is a day of celebration and a day to celebrate America's Independence. In the 1800's Americans still had parties and celebrations.  Philadelphians remembered the 4th by setting off firecrackers, ringing bells, firing guns, and lighting candles. When the war ended in 1783 the 4th essentially became a holiday .  In 1941, Congress finally declared July 4th a National Holiday.  How have celebrations changed over the years? 

Over time, various other summertime activities also came to be associated with the Fourth of July, including historical pageants, picnics, baseball games, watermelon-eating contests, and trips to the beach. Common foods include hot dogs, hamburgers, corn on the cob, apple pie, cole slaw, and sometimes clam bakes. 


The second president, John Adams, would have approved. "I believe that it will be celebrated by succeeding generations as the great anniversary festival," he wrote his wife, Abigail. "It ought to be celebrated by pomp and parade, with shows, games, sports, guns, bells, bonfires, and illuminations from one end of this continent to the other..."

Uncle Kenny's Mustard BBQ Sauce won another First Place for Best Mustard Sauce at the 2012 American Royal in Kansas City. This is another award winning sauce that one first place at the Best of National BBQ Festival and placed in multiple categories in the ZestFest 2011 Fiery Food Challenge. The sauce comes recommended from blogger's BBQ Smoker Site and Big Wayner's BBQ Blog. Upon first look, you would be hard pressed to see that it was a mustard based sauce, it has a slight yellow tint to it. On the ingredient list the Yellow Mustard is followed closely by brown sugar and BBQ sauce so this is not as rich or mustardy as others you might sample. 

Uncle Kenny's Mustard BBQ Sauce flavor profile has the mustard working with the sweetness and compliments the over taste of this sauce. It compliments the food and does not overpower it, so if you like the flavor of mustard, try this as it blends the BBQ flavor with just a hint of Mustard, nothing too overpowering. Is recommended for Chicken, but also tastes great on pork loin or chops, even on pulled pork if you are into saucing things up.

    Daddy’s BBQ Burger

    Just Grillin carries bold ingredients for Daddy’s BBQ Burgers
    :
    ground beef
    1 to 1 1/2 Tbsp. of Daddy’s BBQ Sweet Love Original Rub
    2 Tbsp. Daddy’s BBQ Sauce
    Directions:
    1. To each pound of ground beef, add the following 1 to 1 1/2 Tbsp. of Daddy’s BBQ™ Sweet Love™ Original Rub and 2 Tbsp. Daddy’s BBQ™ Sauce (too much sauce will make your burgers fall apart).
    2. Form into patties (theses burgers will cook best when they are between 1/4 and 1/3 lb. each).

    3. Grill burgers (do not push down on the burgers and watch the flame on your grill, as Daddy’s BBQ™ Sauce will cause flare-ups that might just blacken those burgers).
    4. Serve to tailgaters and enjoy the best burgers you’ve ever had!
